DWTC’s CATERING ARM MEETS SCIENCE-BASED NASA STANDARDS OF FOOD SAFETY

The Food & Beverage division of the Dubai World Trade Centre (DWTC) has become one of the first  institutions in Dubai to obtain HACCP certification, in recognition of the centre’s adherence to the highest levels of hygiene and safety requirements in the food service industry.

HACCP was first developed by NASA for astronauts as a science-based food safety system. HACCP, or the Hazard Analysis Critical Control Point system, is a food safety management system that identifies where hazards might occur in the food production process and puts into place stringent measures to prevent these from occurring. By strictly monitoring and controlling each step of the process, the chances of such hazards occurring are reduced to a minimum.

“We are proud to have achieved this world-renowned certification,” said DWTC General Manager, Hospitality, Ahmed bin Hareb. “It is the result of a dedicated team effort over a long period of time, during which we put into place all the checks and balances required to maintain the exceptional food safety standards required for this award.”

“HACCP is important to the food service industry because it identifies and controls potential hazards in food production. By controlling food risks such as microbiological, chemical and physical contaminants, public health is protected and consumers can remain assured of top-quality, safe products,” Mr bin Hareb added.

In order to achieve the HACCP certification, the DWTC had to put in place a series of mandatory measures, which included conducting a hazard analysis, identifying and monitoring critical control points, establishing necessary corrective actions and verifying as well as documenting the entire process.

The catering arm of the DWTC has over the years built up a solid reputation of catering for a host of functions, both on and off-site. These include royal weddings, banquets, parties, launches, conferences and exhibitions. The DWTC’s state-of-the-art production kitchen, which is equipped to cater for over 7,000 people at a time, was built according to HACCP requirements that took into consideration stringent safety regulations. It is manned by a team of hand-picked chefs from around the world, who are renowned for their expertise in Emirati, Lebanese, Iranian, French, Chinese, Indian, Indonesian, Moroccan, Swiss, German and Eqyptian cuisines.
